Pickled watermelon rind. I only recently heard of this and had to try it. It was fine, but it is hard to imagine it wouldn't be with that much sugar. Essentially bread and butter pickles with rind instead of cucumber.

Today Jo and I followed the recipe, just the way Alfonso does in the book. Highly recommend the Paschkis family recipe for apple cake. The book is pretty adorable, too!
